Pumpkin seed oil gnocchi

Ingredients
  • 1 kg floury potatoes
  • 200 g flour
  • 1 egg
  • 2 tablespoons pumpkin seed oil
  • salt and pepper
  • butter
  • Parmesan cheese
Cooking instructions

Peel the potatoes, cut them into small cubes and boil them in a pot with water for 20-25 minutes until they are soft.

Drain the water and mash the potatoes.

Add flour, egg, pumpkin seed oil, salt and pepper and knead everything into a dough.

Form the dough into thin rolls on a floured work surface and cut into small gnocchi.

Cook the gnocchi in a large pot of salted water for about 2-3 minutes, until they rise to the surface.

Drain the gnocchi and fry them in a pan with a little butter and grated parmesan.

Serve with a spoonful of pumpkin seed oil.
